What is Miso soup ?
Miso is from China to Japan as a foreign-owned back in the early days. It was called "soybean paste" at first, since it was introduced in Japan for the first time. As time passes, the Japanese civilians have improved and innovated this so-called "soybean paste" into what is called "miso".
Ingredients and Development
What is miso ? It is made from fermented soybeans, salt and Koji. Koji is a yeast that is similar to that of yeast for bread design. Differences
Miso comes in a variety of forms of white miso, red miso, miso black, and many others. Miso color is depending on the fermentation time,and the longer the fermentation process, the darker the it will look. Among the different types of miso, white miso and red are the most commonly used in Japanese society. White Miso is used mainly in the Kansai region, and white miso reduces fermentation time of 3 months. By contrast, red miso fermentation time for 3-6 months or more, and is used mainly in the Kanto region. There is also another common type of miso, which is called "Awase", which is a mixture of white and red miso together.
Forms
With the perfection of miso soup, Japanese manufacturing companies make more practical and easier to enjoy the company of miso soup. There are two types: 1) miso paste, 2) instant miso soup.
1) Miso paste : it is usually in the form of paste, which can be good for the miso soup base, sauce marinade for fish or meat, salad dressing and gravy. For miso stick, never spoils, but keep the fermentation.
2) Instant Miso soup : has all the ingredients on the package itself and the tofu, seaweed and other moldings. Miso soup instant powder is what you see in the supermarket most, but here is another class called "freeze-dried miso soup". This type of miso packing more and better taste compared to the dust. However, the cost is relatively high, unless you're in Japan, or you do not see this in your local supermarkets.
