What is Shawarma?

The word "Shawarma" is derived from a Turkish word "Çevirme", which means "giro". Shawarma is from döner kebab in the northeastern part of Turkey. However, Shawarma recipes have been brought to form and popularity by the Turkish population residing in Germany. In ancient times, the wood fire was used for cooking Shawarma instead of the modern gas flame.

Shawarma, as it is called in Arabic, is basically a sandwich wrap filled with lamb, beef, veal, turkey or chicken with a vegetable salad. The wrap is either freshly made pita bread or tortillas. The meat was marinated for a few hours and then roasted over a slow flame for several hours. The Grilled hot meat mounted on a special machine known as spit, then grated. The shaved off meat that is dropping on a circular tray below to be recovered is later rolled on the bread.

Mayonnaise, chili sauce, vinegar or traditional Arabic sauces such as tahini (made of sesame) and hummus (made of chick pea) and chopped cucumber, onion and tomato are added to the filling for a perfect service.

The traditional shawarma is often confused with an American Greek dish called "Gyro". A Greek dish based on meat cooked in a vertical rotisserie, usually pork, chicken, beef, veal, lamb or mutton. Other alternatives, such as feta and haloumi cheese, and normally served wrapped in a flatbread such as pita or sandwich with cucumber, tomato, onion and tzatziki sauce. Because pork is not authorized in both Arabia and Israel, Shawarma came into effect which has no use of pork in it, so it is eligible for all Muslims and Jews as well.
